also found this tute on Quilt in a Day, shows her doing her center seam bit. clipping the thread and twisting flat.

Good instructions - what I would do a bit differently - pick out the stitches one by one up to the seam line - leave the threads (1/4 to 1/2 inch) to minimize the seam from coming apart.
