I've made many and base my center on what works best with the grouping. I have also done a double center, with a plain larger circle and a more decorative mini circle

​I like them with the center showing the background fabric. It makes the fans stand out and gives a nice symmetry.

I did my centers the same as the background block. It makes it look as if there is no center exactly.

I think it depends on your fabrics, I used a red in mine

I have not heard of a certain traditional color for the centers before.

I am working on my dresden plates...Blades in reproduction prints on a cream muslin. Center is black and the sashings will be in royal blue. It is going to turn out really pretty, I think. It all depends on what "tickles your fancy".
