You can use poly fill but make a hole in the middle of it and fill with crushed walnut shells.

i have that very same gravy boat, It was my mothers, I use it occassionally on family get togethers. Brings back a lot of memories. i don't know if I have the heart to make it into a pin cushion but I love yours.
