Thank you for all your input. I will be using a large hoop and I use a batting that is 80% cotton ad 20% poly.

I do nothing but hand quilt. If I use Warm and Natural I've noticed my stitches aren't as even or close together. I much prefer a med loft poly. Also, it will be much easier to quilt if the seams are pressed in the middle instead of to one side.

I also hand quilt and I like Hobbs 80/20, Quilters Dream Request or Quilters Dream Wool. Are are very user friendly for hand quilting.

Hobbs wool is said by many to be the nicest to handquilt through. And if you quilted inside each crumb piece, avoiding the seams, that would avoid the seams... is that possible ? I dont know how big each of your pices is.
