I press open most times. I use this. https://www.fatquartershop.com/12-in...we-and-me-wool To keep seams from flipping I use a flat bridge that takes the lip away from where the plate and machine body meet. A piece of masking tapes works.

I press both ways, according to what makes sense to me. For instance, in this kaleidoscope block (of which I made 49), the individual wedges were strip pieced and it was much easier to join them together if the seams could be nested. Then I pressed the joining seams open, because it helped me with the bulk at the center.

Having choices is one of the best things about quilting.
