Equally, I am sure that there are many quilters in Northern Ireland. As I am sure you are aware, Northern Ireland is part of the UK, not the Republic of Ireland.

Whereabouts in Ireland will you be? Last time I was in NI I went to Armagh and there were about 3 quilt shops in the area. I was with a local who was able to take me, they were quite tucked away. If you google you should find some. Fabric is expensive. Enjoy your visit Ireland is a beautiful place. If you're in Dublin take the time to tour Trinity University and the Book of Kells exhibition.

I don't have quilt shop suggestions, but while on a cruise a few years ago we went to Ballyknocken for a cooking class on scones (both savory and sweet). I'd recommend that for a cooking class stop. https://ballyknocken.ie/
