Hi. I think a very easy would be a Rail Fence, or even a scraps quilt like on the cover of American Patchwork and Quilting. For one block use 3 darks and 2 light. For the second block use 3 lights and 2 darks. Just alternat the blocks and make any size you want. Looks like a 6 or an 8 in block.

Dina have you checked a site called Bonnie Hunter,Quiltsville. She shows a lot of scrap patterns and pictures of step by step assembly. I have made several of her designs.
