I like to make the back as interesting as the front and one way is if I don't have enough of the backing fabric, I lay it diagonally and add contrasting triangles. I think it works nicely for kids' quilts.

All the time. The extra wide fabric doesn't come in enough patterns to suit me. I rarely use a solid fabric either--can't hide your mistakes. It's your quilt, do whatever suits you.

I also use the diagonal piece -- if I am doing a small quilt and have enough lenght in my fabric piece. I use the John Flynn method and I have been very happy with the results. I have done this with small prints and larger prints and really like it. Ihave not done it with larger quilts -- though I may have to do it for my son's quilt since the back I want is 90" wide and the quilt is 110" wide.

My problem is I drive myself nuts trying to keep the back seams away from the front, this works better for me.

Craftsy has a free class on creative quilt backs. Might be an opportunity to see if you like their classes before you purchase one, but don't know if you have to be a member or not. I've been pleased with the ones I've taken...

I have pieced a lot of backings, this is one I just tried with diagonal stripes.

I just recently did a pieced quilt block. I googled "pieced quilt backs" and looked at imagines to find one I liked.
