I do it all the time. I have a cutting mat at my side table near my sewing machine. I just twist around on my armless desk chair and cut and iron too. It has saved my back. Also, a friend gave me a wedge for my chair. It fits around the back and supports my lower spine.

I use my ironing board and adjust it to the level that I need. Sometimes when I am doing long fabric I take a pice of shelving board that I bought at home depot and place on top of it. Works great.

As long as I get enough leverage, the answer is yes. I cut most of my subcuts and smaller blocks while sitting at my table. However the longer strips and big blocks, I prefer to stand over and get lots of pressure on the ruler.

I have a banquet table that I use for cutting, etc. I sit to cut. Some quilters raise the table with leg extensions so they can stand and cut. I just do without the extensions and sit and cut.

With a rotary cutter I always stand to cut. But like others there are some great ideas!

Or an adjustable chair, like the comfortable executive office chairs.

I have never stood up to cut as it causes too much pain and have no problems. For larger pieces of fabric, I rip then trim, fold a lot and use a good quality cutter with sharp blades and have no problems.

I have almost this same set up. I only stand to cut very long items. Just think it out and try different ways.

At last! Someone who tears fabric then cuts the torn strips into smaller pieces -- sitting down! I have a very bad back and can't stand for more than a few minutes, so I've been using this system happily for 15 years. I should note that I never plan to enter a quilt contest or to have my work judged. I do a pretty good job and love what I do, and that's just fine with me.
