I have done this on two quilts. The top was a smaller plain border while the sides and bottom were wider and more decorative. I have included a picture of my favorite. The white border with the red stripe and smaller nine patches is on the sides and bottom only and the small red border surrounds the entire quilt.

I would go for the 3 sided option. Bed quilts often don't have a top border.

Instead of making two borders wider, why don't you consider adding an 'inner' border which is just on the two sides you want to expand, pick a pretty fabric, inset it all with sashing, then do the outer border?
That might work on a medallion.

I've done this and it comes out very nicely. In fact, I've seen several vintage quilts that were done this way. After all, the top gets tucked under a pillow. If the quilt is large enough to go over the pillow, no border at the top means that the pattern is seen and not just a blank border.
