I have made at least four or five log cabins and do it by strip cutting, not pp. But do it whichever is best for you.

Log cabins are just straight stitching and so easy that I would not paper piece. Just watch your seam allowances, cut straight etc. But, maybe you would like PP for miniature logs.
I agree as others suggested; try a block or two each size strip and each method. Then use the method you like best. And, I am thinking you will end up using different methods for the different size strips and blocks. Have fun, use your extra practice pieces for pot holders, check book covers, etc. |
I paper pieced mine because the strips were fairly narrow and I had an easier time of it using that method for a bed sized quilt.

My aunt passed away and left me a ton of log cabin blocks made on muslin foundations. Now, that was perfection! I am of the "cut strips and trim" persuasion.

This was my second actual patterned type quilt I made and it was 110 x 110 and I did not pp..mine turned out beautiful. I only had a 5 squares that did not come out completely squared. I did have to go very slow sewing, as I did not use starch at all.
