I've also used the foot that I do blind hemming with. It has a little piece of metal that follows along the seam and opens it up for stitching. Only thing is, it doesn't work as well as the walking foot to feed the fabric evenly. But is surely helps with stitching in that ditch.

Are you planning on straight lines and very gentle curves? This is where you would use a walking foot but a regular foot could work with changes to tension and presser foot pressure . If you are free motion quilting (stippling, loops etc.) you need a darning foot and probably feed dogs down. In either case, make a practice sandwich to get the bugs worked out before starting on your actual quilt.

I don't have a WF, and do all my own quilting, on quilts which are mostly 60x80, so not terribly big. I use a zigzag stitch, and use the pattern of blocks as my guide. This is what works best for me. I have tried FM, but I don't have the patience to keep practicing, so I went back to my own method. It works for me, and everyone who gets them, doesn't mind. Whatever works for you, is great. You just have to find that choice, and with all the good advice you get here, you will find it. Enjoy!!!
