I would go with a 10 minute block quilt. It is basic but with a bit of interest in the insert portion of the block. You can really be creative with the blocks or you can tone it down as much as you want.

What about a coin quilt with just 3 columns of coins on a white background. I think those are lovely, contemporary and very "quiet".

That "not busy" could mean too many things...
take a book with lots of pictures of quilts to them
and ask them to explain what they think "not busy" is.
That could save you a lot of trouble, and could be a very interesting and entertaining conversation.

It could be tone-on-tone fabric or a pattern of blocks like an irish chain which is made of plain colors, perhaps a (two color) quilt made of lights and medium shades of the same color.

I am thinking that double Irish Chain is one of the finalists.
Need to look at quilters cashe and see if there is something good for me.

Quilts are never really busy when if you use non-contrasting colors. When the colors blend, the pattern gets lost and then it doesn't look busy.

A monochromatic scheme is not busy. Look above at LoriEl's avatar. That is not busy but beautiful. It is a complicated pattern, but the color scheme idea could be adapted to any pattern. A center made of med to dark fabrics surrounded by a light. And you would not want a lot of pattern contrast in the fabrics. I think a group of batiks in the same color family and blenders could be really pretty and restful.
