I would stitch two together on the diagional, then plan my quilting to cover that seam.

I would stitch the two shorter pieces together and then try to incorporate them into the quilt around the edge where they wouldn't be as noticed. By the time it's quilted, I don't think it's going to stand out at all.

Option b. I have seen it done on a wall hanging that will be hung in a public place for the world to see. I didn't notice until the creator of the piece pointed it out to me.

I use pieced backgrounds for applique, so a couple of dinosaurs appliqued on top of a "mistake" is normal for me!

Ditto. This is exactly what I would do. Piece your remaining fabric together til it is large enough to cut new rectangles.
