This is exactly how I do mine except I attach the backing with additional quilting using invisible thread. |
Someone posted this website recently that shows how to do Quilt-As-You-Go in rows, and without sashing. She has a photo tutorial and a Youtube type tutorial. Not sure how it would work for a Double Wedding Ring, but .......

The joining of rows is pretty standard for QAYG. Either hand stitch the fold for it to be invisible are machine stitch through top and back. Goorgia Bonesteel has the best QAYG books for learning the how and why of how it all works.
