You still didn't say which island(s) you were going to be on.
That makes ALL the difference.
I can tell you what is in Honolulu (Oahu), but if you aren't going there, then there's no reason to list them.
I lived on Oahu for almost 12 years and pretty much know where you can get some good deals. Plus, Walmarts there still sell fabric (Hawaiian Fabric)

If you go to the Kona side, you HAVE to go down the main road and spell your name on the side of the road in white coral. It's just something you HAVE to do!!
There's really not a whole lot to do there. Lots of pricey touristy stuff.
If you are into adventure, I suggest doing the Manta Ray snorkel. It's awesome and breathtaking!
I did manage to hit a couple Coffee Farms, but didn't get to any quilt shops there. Wasn't really there for that (gasp!) since I was living on Oahu at the time and could get what I needed there.

I have not booked yet - a friend of mine is going next week and she will bring me back some info. The main reason for going is so my darling little sister can swim with the dolphins and that can apparently be done best on/off the big island. Pat wants to go to the big telescope, Melissa wants to go horseback riding, Phillip wants to play in the sand.....we are not touristy people and will most likely see what nature has to offer. I believe that is where the volcano is too. We have planned 7 days (including to and fro). Should be fun.

All of that can be done on The Big Island. Tons of beaches. If you can get yourself to the Green Sand Beach, it's awesome. It's a hike to get there because rental cars can only go so far. There are also black sand beaches too! Awesome!!
Right in Kona in the touristy section, heading on the road from town to the Sheraton, there is a tiny little church. Next to the church is a stone wall and you'll see people out in the water surfing. Anyway...right in the water amongst the rocks next to the wall are turtles! You can practically reach out and touch them, but I wouldn't advise it. You can get into trouble, BUT...you can get some GREAT pictures!!!

Okay, Honolulu, Kamuela, N. Hawaii, Hilo, Kona Na'alehu are the places mentioned, does that help?
