Your batting's package will tell you the quilting requirements if it is not on a bolt. Some needs to be quilted as small as 2-4 inches, others can take up to 10" apart. But just because it says 10" doesn't mean you cannot do a tighter quilting.

I was told that the quilting should be a fists width apart. Works good most of the time.

don't pay any attention to what the label says. Quilt enough so you will give the layers stability depending on the ultimate use of the piece. Even a wall hanging that is quilted 10" apart will droop in time with weight and humidity. I say there should be a consistency of quilting overall the quilt. Design will also make a difference.
Use and look is important.
