I think a 3 sided border would be great if you have pretty matching shams or some nice pillows you want to display at the top of you bed. Makes sense to me and saves on fabric too
I would only do it with 3 borders if it were a directional pattern. I like to reverse or rotate mine so they wear evenly.
My grandmother put borders on 3 sides of a quilt because the bed sat against the wall-always.
I prefer borders on all four sides so I can reverse my quilts so the wear is even. All of our beds are queen size except a trundle set for the youngest grand kids.
I put the border on all sides but I also use shams that cover it up. Sometimes I think older quilts with borders on 3 sides were just being practical. If a pattern is directional, I see no reason to add the 4th border. May have to try it one day.

I'm a little OCD at times....either no borders or all four for me.
Never thought of doing that but it makes sense.
I have a few vintage quilts made this way. Yes, it makes sense but I don't like the look.
Most of the time I don't care for the look of borders on quilts. I just prefer the look of the pattern right up to the binding. But I can see the use of them, especially to enlarge the quilt if needed. I did make a quilt to gift to a friend a few years ago and ran out of two of the fabrics, so did take what fabric I had and put on a 3 sided border so it would fit her bed. Certainly turned out very nice.

If I border a quilt, it's usually all four, but I have a quilt on my bed now that has only three.
