After thinking about it, I realized depth of batting would have nothing to do with the issue. It may be that the demo used binding strips cut on the straight-of-grain while you may have cuts yours (as I cut mine) on the cross-grain. Cross-grain strips have a little more stretch to them than straight-of-grain.

I don't use the tool, but do leave a 1/4" gap--works great for WOF binding, for Length of fabric I usually will do a scant 1/4" and if using bias binding I aim for between 1/4 & 1/2" gap.

Julie Cefalu has a good YouTube on binding and leaving the gap. I couldn't get it right no matter whose YouTube I saw or book I read. Then...along came Julie. It works!

I watched a YouTube video yesterday that was similar to this method without using a special ruler. I was going to try it the next time I was binding:

This ruler has perfect lines to cut for the diagonal and no twisting of the binding ends. I have tried very video and demo of how to join binding. I like this way the best, so far.

for me, the best binding is from Julie Cefalu, no tools needed

I just make all of my bindings on the bias, and cut the ends 1/8 over lapping. I sew the ends and sew it down. Bias “gives” enough that never I have extra. Works for me.
