Love the quilt. Gray thread would be a good choice for thread. The idea about starting in the middle is one of the best. Middle one way and then the middle the next - if you are crossing stitching lines. Lots of basting - spray, pin or whatever you choose.

To be honest, I wouldn't use a fusible batting for the first time on this quilt. Most quilters limit use of fusible batting to wallhangings or small quilts; it can create quite a mess with a larger quilt.
