I use a Pellon interfacing EK130. It is a knit. I iron it on the back of the t-shirt with the stretch going up and down. There is no stretch in any direction after that.

I've made 10 t-shirt quilts and have used Pellon 911 for all of them. I pick up up about 10 yards at a time when JoAnn has a 99-cent sale on it. One of the only things I ever buy at JoAnn's. Easy to quilt the top once it's done.

Just be careful on the paint or plastic syllables on the shirts. There may be holes where your needle goes through the shirt. I have seen it crack and peal in them. Good luck.
