mostly cream or tan.

I usually use Anton Robison oatmeal for piecing. Will use other colors for dark fabrics but oatmeal works well.

This is the hardest subject to respond to. I had to walk away from a large sewing stash for reasons of personal safety, (no longer an issue, thank you for caring) and if I had any idea, how hard it is, to replace a 35 year thread collection, I would have found a way to bring it to Oregon. I got very spoiled being able to just reach for a color and know it would be there. I just bought new thread when I finished a spool. Now, it is 6 years later, and my (thread spool) holder is still half bare. Now when I need a color, I just buy an extra of that color.

The good news is, a neighbor of mine, was thrilled in the extreme when I called to invite her over for coffee, and she arrived to learn that my stash was all hers. We filled her car twice. (She makes quilts for nursing homes.)

if I'm using mostly whites I use white and black with black but for patchwork I use the neutrals, of course I have every color I could ever need in my stash!

I usually use cream or off white but if I have to I try and use the color of the fabric I am sewing on at the time.

I use a very light grey Rasant 120 thread. The reels of thread are 1000 metres. It is a wonderful thread and I have never had a problem with it. When I was manufacturing I used to buy all my threads by the box as they had to be a perfect match. So I have plenty of colours on hand. For quilting I usually stick to light grey or light beige and use a matching bobbin unless I feel something else would be a better match for what I am sewing at the time.
Rasant is made by "Ackermann-Goggingen RG". Don't know if this is of help to anyone. I am in Brisbane Australia.

You must have peeked into my thread box! This is exactly what I use!
