well when i started quilting in 1982 the qult teacher taught a different block for 6 weeks that really helps to learnsomething new each week that way you can pratcie on what you like

Perhaps try a sampler quilt that uses blocks that need different techniques! So you're not locked into one design if you don't enjoy it! And you'll more quickly find just what techniques and patterns you do like best!

You certainly have tackled some difficult blocks, most beginners start with simple 9 patch blocks. One thing you could try is to make the same blocks/patterns again but with different fabrics and/or colors, most times the quilts will look completly different than the first ones you made. Whatever you decide, keep trying new stuff, it's the best way to learn. May in Jersey
