Eleanor Burns has a lovely book out called "Quilts Through the Seasons". Under the winter section there is a Lodgepole Pine Quilt that can be made in many sizes and there is an optional Red Cardinals section on page 52. Perhaps this might appeal to you. Happy holidays and quilting!

I'm starting one now. It's cardinals that I am fussy-cutting and then putting a border around each block and doing 12 X13 blocks.

I am very poor at applique so I opted for the cardinal fabric, fussy cutting and framing the cardinals in a pieced block. Pretty fast and not too difficult over all.
