I have been collecting fabric of different shades of gray and wanted to know if any of the board members would have an idea on what quilt pattern I could use. There will be a lot of different fabrics but I'm not sure how I would arrange them and have them look good. I would love your help. Thank you...

Check your library for books on neutral or Japanese quilts. They are often taupes & browns, but greys would also look wonderful. I did a google image search for 'neutral quilts' and lots came up.

If you see photos online, can't you change them to grayscale to get an idea? It gives some idea of contrast when fabrics are in color.
I would think you'd need serious differences in value and some attention to tone.
i'll be curious to see what folks come up with, as a lot of us have large amounts of a single color and could use the same ideas.

I think this one would be pretty in grays. I would substitute the gray in the colored areas maybe use a bold vibrant color in the white areas. http://www.robertkaufman.com/assets/...meadow_pdf.pdf

Labrinth Walk is shown in shades of gray. Also a log cabin would be pretty with a focus color as the center block. There are lots of quilts that would be pretty with shades of gray, but I do think you will need a pop of color. Can't wait to see what you finally decide.

How about the Bargello quilt pattern from anniescatalog.com called Mystique? It could be done with all the shades of gray and an accent color for the center.
