I just started a Quilt In a Day Sunbonnet Sue for my mom, and I was totally confused about which interfacing to use.

I would make different samples using different weight, this way you can see which you like best... have you thought of using water solvent stablizer, this would give it the soft quilted feel after you wash it... i made 3 quilts for DDs many many years using iron on fusible and SB Sue feel bulky where I used the iron on fusible.

I made a Sunbonnet Sue baby quilt a few years ago and I just pinned the pieces in place, turned under the edges and pinned them in place, and sewed everything down with a running stitch. Others I know have used a blanket stitch with black thread but I liked the running stitch better.
