I've read a lot on this board re: the pros and cons of the various makes and models of fabric die-cutters - but I've never seen one work. Is it possible to fussy-cut shapes on them?

Yes it is. I have some dies for my studio cutter that are cut out in the center so you can see the fabric for fussy cutting

Looks like the GO doesn't offer this feature. Is that correct?

The new Go dies have a lighter grey in the center for the shape, making it easier to see where to place the fabric.

I would be concerned the fabric would shift when going through the machine.

If you have the studio cutter, they have acrylic dies. The area that is within the blades does not have foam, so you can see thru it and position the fabric. I'm guessing that you have to be careful when you flip the fabric & die over to put it into the machine, but the foam does help keep the fabric from slipping.
I'm pretty lucky. In addition to the Studio, I have a big Ellison cutter. The Ellison cuts with the blade down, so you put the fabric down, put the acrylic die on top, positioning it as you like, then just run it thru the cutter.

I'm sure it is you just have to line up your fabric right. I just got the cut n scan from brother, so easy to fussy cut. You can actually scan the fabric and it'll put a picture on the screen and then you place your design (also saved on the machine) exactly where you want the machine to cut. Easy

I have watched a video showing the outline of the die shape being marked by a felt pen so you can see where tp place for fussy cutting. Of the 2 machines I have noticed the acqui go machine has limited dies and some are discontinued.
The sissex appears to offer a wider range and be in more places.
