When are you the happiest while quilting?

I feel the same way. I think it's because I really get to "know" the long-term projects. And I miss working on them when they're finished. For me, it's like music. I far enjoyed singing in performance choirs which take months of preparation and learning of the music, as opposed to church choir where we'd practice for a week, then reshelve the music.

My favorite time to quilt is early in the morning, when I can't sleep because my back hurts, or Phoebe (one of my quilt inspectors) seems to think she needs something, or just because I woke up early. It's like stolen time - the neighborhood is quiet, the streets are quiet, and the only noise is the happy hum of my sewing machine.
