Why miter the borders?

depends on your fabric for the border. If a border printed fabric, then it looks better to mitre and take advantage of the prints. If solids or background type fabrics, then it probably won't make much difference other than the eye will see the corners and mitre might look more finished.
If you do mitre border then the mitre in the binding should align with the seam on the border.

ljwinemiller, sometimes I put the borders on the sides, then across the top.
Sometimes, like the quilt I'm working on now, I'm putting cornerstones on the corner, matching smaller corner stones in the sashing.
I save the miter for the prints like Holice mentioned.

She didn't miter her corners. She said it's worldly and a waste of fabric, and they try not to waste anything. That made sense to me.
So to this day I don't miter unless someone requests it.

Like many others have said already, I also don't always mitre my corners on the quilts I make as it really depends on the look I am after and the pattern of the fabric I used in the border.
I also keep my corners in the scrap basket for "one day use" however I hate doing triangles and so that day ...
