What a perfect block for Kass' summery Citrus, Lime and Orange quilt. Stars are my favorites. Those colors just shout summer to me.

Sewbiz this Northerner just went out and bought fresh collards, they didn't have turnip greens. Do I cut up the greens? Do I remove the stems.

Wash them in cool water several times. They seem to hide dirt... Next, if you prefer you can cut out the stems, or you can just chop them in with the leaves. If they are heavy and fibrous you may want to get rid of them... I don't know how big your greens are. Then chop, chop, chop with a big knife. They are going to cook down a lot anyway, but they are easier to eat if chopped first.

Then put them in some chicken broth and let them simmer until they are as tender as you like. Down here we like to sop up some of the liquid (pot liquor) with a hunk of cornbread, or you can throw it out. I usually throw most of it out and keep some.

If you've never cooked greens before, let me warn you of how much they SHRINK. A pot stuffed full of them will cook down to just a few inches. But think of all those concentrated B vitamins... yay!

edited to add: No need to cover the raw greens with the broth. They will cook down. Fill the pot with greens (stuffed down is ok) and then add like 1-2 cups of broth.
