I've done a tiny bit of applique, but I really want to do more. Any tips for a newbie?

Do not start with anything like the dragons. As a newbie project they may put you off. When you have done a few simpler ones and got the technique off pat then you will get a kick out of doing the more complicated ones.
It's like anything, learn the techniques and then you can tackle anything.
