I use "regular" quilt solids with 44" width. Unfortunately the wide fabrics for backings that we can purchase here don't have the quality I want for my quilts and only very few colors.
I try to find a fabric that has a high thread count like 75. The P&B brand is great for me, also the Moda Bella Solids.

Elizabeth,
I don't use a zig-zag stitch for cross hatching, the direction I follow the quilting lines is zig zag. Here is a little sketch, I hope that helps to make it clear.

Yes, I sew the length together by hand.
