I did a similar type and did a straight stitch around each piece. with matching color. Lots of work but looks beautiful.

the hardest so far, i haven't finished, was the layering of the parts. i think my pressing sheet is defective , it is all warped and doesn't lay flat. i couldn't see the layout thru it, therefore couldn't use it as directed. i found the 'dashed lines on the pieces that were to lay under another piece didn't make sense.
the 'moose' ended up smaller than the layout, but looks ok.
i would do another one tho!!! i would love to hear how you are making out with yours.

when i made my moose wall hanging i used a tiny zig-zag to stitch it all down- it does take alot of stitching-but if it will every be washed it does all need to be stitched down. i used a darker thread and it almost has a stained-glass look. sorry- no pic of it- it went out the door as soon as i finished the binding- and i tend to be terrible about pic's- but i am trying to get better :)
i saw one like yours that a blind hem stitch was used-
the reason i do not use a straight stitch is then the edges (although tiny edges) tend to lift- and fray- this is avoided with the zigzag. less (raw-edge)
