I think the small plaid triangles being off grain are visually more of a problem than the blue centers not coming together. JMHO. Whenever I use plaid, which I do for strip piecing, I cut it on the bias.

Strip piece and then for hexagons cut on a 60 degree angle and for octagons on a 45 degree angle. These angles are usually marked on cutting mats or you can get template. By the way, I'm in the St. Louis area too. |

for me i have better luck if i take a couple minutes and draw my 1/4" lines on the joining pieces, then when i stitch i stop exactly in the 1/4" intersection. everything comes together precisely and i press in the direction they want to go in or press open.
