How about a Lover's Knot. I got Elanor Burns' Lover's Knot for Christmas and it would look gorgeous in the fabrics you've chosen.

With the varitation of fabrics, I would consider different blocks and use the black and champagne as complimentary.
Choose a block that would enhance each of the fabrics you have.
This would allow you freedom of fabric use. Start with the comfortable block size- like 12"- 10" whatever.
I think you have great choices to start with. I always love the look and challange of this type of quilt

do this one it is a nine block cut in hale and then cut in hale so you have 4 blocks and then you can turn them any way you would like. He is the one I did.

That quilt was made by twistedquilter, not me.
She gave the instructions and pattern in her first post.
The fabrics she chose make it special.
It would be so easy to modify the size of that quilt by just changing the size of the strips. Easy enough for a beginner to do in my opinion and it would look spectacular.
