I like #1 with solid sashing around your blocks. It has that vintage look.

I like the red and black.

I like all of them, but I think #3 is best.

You could frame the blocks in black for a classier look. I think the other 2 are too busy looking with your embroidery.

You need to decide which is your mother's style. MY mother would have gone crazy over those roses.
