I do both things. I have a stash that combines my fat quarters and yardage by color; but, I also have things by project. I use "project envelopes" that I picked up at walmart or target, etc... they are clear or tinted plastic. I label the envelope with pertinent info, put the pattern inside, along with fabric I pull from my stash. I set the envelope atop of the yardage that won't fit inside and keep it all in a rubbermaid drawer until I'm ready. I also list these future projects on a whiteboard, so I don't worry about them. It's a handy system for me and when I'm working on those projects, the pieces, scraps, my notes, and baggies of blocks have a "home."

I have those same envelopes that I put projects in and keep in a container in my sewing closet. The envelope pictured below contains all I need for a Christmas quilt for next year. I have several other pojects under the top one. It works well for me too. |

I seperate loose fabrics into solid, theme, country, floral, ect. Then they also get seperated into colorways.
On one side of the close is the loose (undetermined) fabrics and the other is the kits and collected fabrics that are for quilts already planned. My garment and home dec have been seperated into bins and are stored in another closet in a spare room. The drawers hold stablizers, interfacings, projects in different stages and other tools that I use for sewing/cutting. But mostly fabrics. I have mine in bins based off the main theme of fabric, such as stipes/plaids, floral, novelty, solids, holiday, patriotic.
I don't have as big a stash as some so this works for me. When I think of a project I want to do I gather up the fabrics I want to use and put them in a seperate bin. I'd take a picture but my sewing area is terrible since its crammed in the back of the laundry room |
What a nice fabrics! I store some fabrics by project and I even include thread and pattern but not batting and often no backing. some FQ are stored according to color. My thirties FQ and fabric are all together as are the civil war fabrics, Hawaiian style fabrics, bug prints, fish prints and batiks. I also use ziplock bags, those plastic zippered bags that come around sheet sets and plastic bins to store home made kits in.

mine are all stuffed in bins but the ones i have plans for in the near future i keep in bundles so when i have time to start a new project i don't have go looking through everything. i just grab the bundle. they are in their own bin.

I keep the fabric I bought for a specific quilt together. The others are in totes. Those make it hard to find what a want though. I would love to put them on shelves.

I don't have as big a stash as many. 90% of it fits in a 5 drawer dresser. One drawer is odds and ends, patterns, preprinted labels and a few orphan blocks. Another is just red and greens and a few Christmas prints for my someday christmas quilt. The third is mostly batiks. The 4th drawer I store fabrics like you, designated for a specific quilt I have in mind. The last drawer is yardage (any cuts 2 yards or more). I then have some more yardage designated for someday quilt backs stored in those giant ziploc storage bags that you squeeze all the air out of. I then have various WIPS and UFOs in different stages for scrap quilts also stored in ziploc baggies. My closet in my sewing room has batting and a few other crafty type supplies.
