IMO the geese balance the pieced blocks by repeating the pattern of the star points.
BTW, what you have done looks great. It will be some work to do the geese, but worth it.

I think the flying geese would make the embroidery stand out. It would move more into the center and really pop the quilt.

I too am working on the same quilt top. I am not going to use the flying geese either, but will do some kind of border. BTW, yours looks terrific so far. Keep us posted on what you do.

If the flying geese are too contrasty they would take away from the centre focus, but if the colours are muted, not too contrasty, e.g. deep taupe geese on medium taupe background or the other way round the pattern would complement + balance the centre, but of course, your decision.
