Sweet potatoes - do you have a different way to make them?
 
I love sweet potatoes and I usually make them just plain with butter. For tomorrow, I would like to fix the sweet potatoes in a different way, but I don't like them super sweet with all of the brown sugar, etc. so they taste more like a dessert than a potato side dish.

Does anyone have a different way to fix sweet potatoes?

I layer my potatoes in a dish then add a walnut crumble top to them. I love it- it's not overly sweet.

Place a single layer of sweet potatoes (cooked or canned) in a greased casserole
Melt 2 tablespoons butter, remove from heat & add
1/2 cup brown sugar
1 cup chopped walnuts
stir together & spoon over potatoes
bake 350 for 1/2 hour to 45 minutes

sweet potato mallow. 1 pound sweet potato,1/2 cup sour cream, 1/2 teaspoon salt, 1/4 teaspoon ground mace, 1 egg yolk,3/4 cup mini marshmellows...prepare and cook potato. beat sweet potato and sour cream and salt mace and egg yolk on medium speed until smooth.pour in baking dish top with marshmellows bake 350 for about 30 minutes bake uncovered.

I don't do this one for turkey day because........well it's turkey day :-) but I do make them other times in the year and we love them.



Rosemary Sweet Potato Wedg
Serves:4

Ingredients
2 tablespoons unsalted butter
2 tablespoons olive oil
1 tablespoon chopped fresh rosemary (or 2 teaspoons dried)
3 medium sweet potatoes, scrubbed clean
1 teaspoon salt
1/4 teaspoon freshly ground black pepper


Directions:


1.Preheat the oven to 450°F. Melt the butter with the olive oil in a small saucepan over medium heat. Stir in the rosemary.
2.Cut the sweet potatoes lengthwise into 1 1/2-inch-thick wedges and place in a large bowl. Season with salt and pepper, and drizzle with the butter mixture. Toss gently.
3.Arrange the wedges on a large baking sheet in one flat layer so they don't touch. Bake in the upper part of the oven, turning once, until softened and lightly browned, about 20 minutes. Season again with salt and pepper, and carefully remove from the sheet (the wedges are relatively fragile after cooking). Serve hot.

We like them with a sprinkling of cinnamon. If you want just a bit of sweetness, use honey. :)

We like them whipped, with butter and brown sugar (to taste).

I haven't tried this, but I've heard that using half sweet and half white in mashed potatoes comes out really good.

I microwave them, peel, smash them up, add some cinnamon, brown sugar and a dash of orange juice. Mix with a mixer to whip them smooth. Serve. I don't care for all of the marshmallows,etc. oh, I love walnuts on them too.

Adding honey s. the brown sugar works too.

cooking for a crowd? Make these up then night before. Pop in the oven.
keep it simple!

Another idea.

Peel the potatoes, slice, mince fresh garlic, mix into olive oil. brush the olive oil mixture on them. Bake on a cookie sheet about ten mins. 350 degrees. Great any time of year! It "roasts" them!

Oh yummy! This sounds delicious, thanks for the recipe.
We just do the old boring way of mashing them and then put marshmallows on top & broil for a few seconds. This new recipe will make a nice change.
