Its almost Thanksgiving and we don't have a section on pie recipes?! C'mon, I know at least some of you don't get your Thanksgiving pie from the store or Perkins. Now who wants to share pie recipes? :D

My favorite pie! Can you tell I'm a Southern girl?!! It's so easy, too. Great idea Goddess. Who doesn't like pie?

Pecan Pie

3 large eggs
1 cup sugar
1/2 teaspoon salt
2 Tbsp melted butter
1 cup light corn syrup
1 1/4 cup pecans
1 tsp Vanilla
1 unbaked 9" pie shell

Preheat oven to 375º F, beat eggs, vanilla, sugar & salt. Add butter & syrup & mix in pecans. Bake 40-45 minutes in pie shell.

Wow! I always thought pecan pie was alot of work.. SOLD! It's pecan, not pumpkin pie for me on Thursday!

Here is the only pie recipe in my recipe box & it is good!

BEST Chocolate Pie

Beat until smooth:
One 8 oz. cream cheese
1/2 cup mayonnaise
Blend in:
1/2 cup sugar
2 eggs
6 oz. pkg chocolate chips, melted
1 teaspoon vanilla
Pour into a graham cracher or ready made chocolate crust.
Chill.

I have some homemade icecream recipes that have uncooked eggs but I think the freezing does something to them, never heard of it in a pie.

I combined two recipes for my Thanksgiving pie, and I never liked pumpkin pie until I made this one:

Crust: 1 3/4 cups crushed gingersnap cookies mixed with 2 TBSP melted butter and 2 TBSP white sugar. Pack against bottom and sides of pie tin, Bake 5 minutes at 325 and let cool completely.

Pie: First, mix 4 oz softened cream cheese, 1 TBSP milk and 1 TBSP sugar until smooth. Stir in 1 1/2 cups thawed Cool Whip gently. Spread in bottom of the crust. Second, Mix 1 cup cold milk with 2 packages (4 oz) vanilla instant pudding (I have used the cheesecake flavor also) using a wire wisk for 1 or 2 minutes to thicken. Stir in 1 16 oz can pumpkin puree, 1 teaspoon cinnamon, 1/2 teaspoon ground ginger and 1/4 teaspoon cloves.

Spread the pumpkin mixture over the cream cheese layer and refrigerate for at least 3 hours.

This is a delicious, cool follow up to the hot turkey dinner.

Peanut Butter Pie

½ cup Peanut Butter
1- 8 oz pkg. Cream Cheese
1 cup powder sugar
1- 8 oz tub of Cool Whip
1 Graham Cracker Crust

Mix peanut butter and cream cheese with a mixer. Add powder sugar and mix well. Add Cool Whip and mix well. Pour into the crumb crust and refrigerate. Makes 8 servings.

Hershey’s Chocolate Pie

20 regular size marshmallows
½ cup milk
1- 8oz. milk chocolate bar w/Almonds (or plain) broke in pieces
1½ cups heavy whipping cream
9” chocolate crumb pie shell (can use graham cracker crust)

In a medium Saucepan, combine marshmallows and milk. Cook over low heart, stirring occasionally, until melted.
Add chocolate pieces; remove from heat and stir to melt the chocolate. Refrigerate 10 minutes.
While chocolate mixture is cooling, whip 1 cup heavy cream.
Fold into the cooled chocolate mixture until well blended.
Pour into pie shell.
Whip the remaining ½ cup heavy cream to use as a garnish.
Makes 8 servings.

I'll take a piece of each, I love pie..........I didn't get any pie...I went to my daughters for dinner and I was to full for pie........she's bringing me some tommorrow.....she doesn't want to get fat .....all the more for me lol :D I am going to try some of these they sound yummy :D
