    Four Bean Casserole


    1 can lima beans
    1 can kidney beans
    1 can pork and beans
    1 can butter beans
    1 lb bacon
    4 large onions
    1/3 C vinegar
    3/4 C brown sugar
    1 T dry mustard

    Cook together bacon, onions, vinegar, brown sugar and mustard. Simmer 20 mins. Add all beans. Bake in large casserole dish for 2 hours @ 325. Serves 10-12


    I use Farmer John end cuts-comes in a 3# package. I probably use a couple of pounds, but I like this bacon.

    YUP! that's pretty much like mine pocoellie! Only thing is mine also has some catsup (about 1 cup). It works great in a crock pot too - on low and is super to take to a pot luck!

    i am going to make this tomorrow but i am wondering about the nutritional content (as in carbs, fat, calories). Does anyone have any ideas on how to calculate that?

    I am still on my diet and doing very well and I dont want to blow it, if you know what I mean. :)
