Andes Peppermint Crunch Chunkies

2 sticks of unsalted butter(softened)
1 cup dark brown sugar, packed
1/3 cup granulated sugar
1 large egg
2 tsp vanilla extract
1/4 tsp baking soda
1/2 tsp salt
1 3/4 cups of flour
1 cup of old fashioned rolled oats
1 cup of sweetened coconut
1 1/4 cups of coarsly chopped pecans
1 1/2 cups of Andes peppermint crunch baking chips
****note these chips are in a red and white package.do not use the ones in the green package.
Preheat oven 300 degrees and bake for 12-15 minutes.
Using an electric mixer , cream the butter, brown and white granulated sugar, mix until fluffy about 3 minutes.
Beat in eggs and vanilla mix on low speed. Now add salt, baking soda and flour. Stir in oats, nuts,cocnut and chips.
measure out 2 tbs. for large cookies and 1 tbs. for smaller ones. roll and place balls on a greased cookie sheet about 2 inches apart. Press lightly and sprinkle some more chips on top if desired. Bake 20 minutes for large and 12-15 for smaller ones. Do not overbake because they will get crunchy on the outside and soft inside. Remove from cookie sheet and let cool.
Yields approx. 30 cookies.
Now enjoy w/ a cup of cocoa or a good cup of coffee or a cold glass of milk!!!!!

Well I finally finished this batch of cookies.Ii have already made 3 kinds and need a few more to bake. Here is the pic I promised.
