    I found this in our little local paper and made it today for lunch and it was very tasty. I like that most people would have all the ingredients in the house anyway plus it was a quick fix. I didn't have fresh mushrooms so I had to use canned.

    4 tsp. olive oil
    1 chicken breast, seared in pan and then cut into pieces
    6 tbsp. sour cream
    2 cups mushrooms, sliced
    4 oz. cheddar cheese, shredded
    2 cups white rice, cooked

    In a skillet, heat oil over med. heat. Saute mushrooms and chicken
    Combine mushrooms, sour cream, cheese, salsa, rice and chicken.
    Place in a greased casserole dish.
    Bake at 350 F (175 C) for 25 to 35 minutes.

    I would make it without salsa, sounds good as is.

    I thought of that when I got into bed last night, did I put the salsa in the ingredient list, duh. It's 1 1/2 to 2 cups of salsa, to taste. If you like it really spicy, I'd go for the 2 cups.
