BBQ Turkey Breast

I know - you don't cook meat in the micro - WELL this is great & I thought that way too until I tried it.
LEMON CAESAR TURKEY BREAST
1 - 5 to 7 # turkey breast - skin on 1 cup Caesar salad dressing
1/2 cup white wine Juice of 1 whole lemon
1 Tablespoon (or more to taste) minced garlic 1/4 cup chopped fresh basil
Rinse the turkey and pat dry. Combine the remaining ingredients and add turkey to the marinade turning to coat all sides. (I use a huge plastic bag) Marinate for at least 4 hours - overnight is best - turning occasionally.
Remove turkey from marinade and place in a micro safe dish skin side down. Cover with plastic wrap. Microwave on HIGH for 10 minutes. Take out and turn it over so the skin side is up and re-cover with new wrap. Microwave on MEDIUM for 10 to 15 minutes.
While the microwaving is happening preheat your grill to a medium heat - if using charcoal place them to one side so you can place the turkey on the grilling rack not directly over the coals. Use the indirect cooking method for gas and charcoal grills. when you place the turkey on the grill either cover with a barbeque lid or tent with aluminum foil and cook 35 to 45 minutes or until internal temperature reaches 165 to 170 degrees F. Baste with the marinade several times while it is cooking on the grill. Throw out the marinade when you are done cooking.
Let stand 5 minutes before slicing it very thinly. It is also really good to sprinkle freshly grated Parmesan cheese on it and serve with cold tortellini salad and fresh fruit - or just have a grand old turkey dinner!
