I know...I did the same thing (googled)and my DH says thats not what he remembered eating so thats why I was asking. I think it was just a classic white sauce from what I can gather. I'm going to try that.

So....what do you folks in New England eat on your salmon patties???
It's a white sauce made with flour, milk, butter, salt and white pepper. We make a salmon pie and we make a white sauce to go on top of it. If you have a cook book just look up white sauce.
I use a med. white sauce from a cookbook and add boiled, cut-up new potatoes and steamed frozen peas to it...yum!

I'm from Maine and when we have either salmon patties or salmon loaf we always have the classic white sauce with hard boiled eggs slices in it. The salmond is served with either mashed or baked potatoes and peas. I like to put the 'egg gravy' as it is called, on all of it.

I've had had salmon patties with a white sauce and my guess is that it had hard parmesian cheese in it and I think it uses "Old Bay Seasoning" too. I can call them tomorrow and ask how the sauce is made for you.

When I make salmon patties, I make a cheese sauce. My family likes it better than the white sauce; my hubby doesn't like eggs. Next time I will try the hard parmesian cheese and "Old Bay Seasoning."

Hi Ida,

I'm guessing at the ingredients. I will call the restaurant in Lowell, MA tomorrow to see how they make their sauce, so you can watch for that post.
