My recipe

Melt 1 stick butter
4 cups mini marshmallows
1 3 oz package of jello

stir and re nuke until mix is dissolved

pour over 4 quarts of popcorn and shape into balls. Altho having had so many years to get smarter I'd probably press into a pan.
The jello flavor is heavenly.
I found the recipe online some years ago called Pink Elephant. One can use any color jello but red and green would make a perfect Christmas treat. These are so easy to make and everyone loves them, change the jello color for any holiday.
Might have to make some of them this year, thank you for the reminder. Pressing in a pan is a great idea, can use jello in the rice cereal recipe as well.

ah, another good idea. I have a really nice silicone rolling pin, I wonder if I'd even need the parchment?

Would it work to just pour the caramel over the popcorn and stir without making into balls? Like the caramel corn sold at the popcorn shops? I have no experience with making candy or anything like that.

Yes you can. I spread mine out on a large cookie sheet, bake at 250 for 45 min, stirring every 15 min or so. then break up after it cools
