    Default Chewy Noodles

    For those of you that like to make your own pasta, here is a "secret ingredient" that you should add to your Asian, pasta dough recipe that will make the noodles a little tougher and chewier: "Baked, baking soda." I like to add it to my noodles that are going to be used for ramen bowls...you now...those slippery, but somewhat rubbery noodles that have a satisfying bite to them.

    I usually add about 1-2 teaspoons of baked baking soda to my dough recipe. Play around with the amount a little. too much will make your noodles bitter. I'm not going to post a ramen noodle recipe...they're all over the internet, but here is how you make baked baking soda.

    Spread about 1/2 cup of baking soda on a parchment lined cookie sheet and place in a 300F degree oven for about 60 minutes, or until reduced in weight by about 1/2. Cool and store in a sealed mason jar to use for later.
