Default Coconut Pecan Bread

A friend brought me a loaf of this Bread last week. OMG!! Best bread I ever ate! Enjoy!!

Coconut Pecan Bread
Makes 2 loaves or... a Bundt Pan can be used

4 Eggs
1 C. Oil
3 C. Flour
2 C. Sugar
2 t. Coconut Extract
1/2 t. Baking powder
1/2 t. Baking Soda
1/2 t. Salt
1 c. Buttermilk
1 C. Flaked Coconut
1 C. Chopped Pecans
Grease and flour pans. Beat eggs, cream in sugar, oil and extract. Add flour and other dry ingredients, then add buttermilk, coconut and pecans. Beat well. Bake for 50 minutes @ 325 If using a Bundt Pan....Bake 1 hour and 20 minutes. Bread will be golden and cracked.
Glaze:
In saucepan combine, 1 C. Sugar, 1/2 c. water, 2 T. butter. Bring to a boil, and boil 5 minutes, stirring constantly.
Remove from heat and add 1 t. coconut extract.
While the loaves are still hot from the oven....pour the glaze over them. Allow to stand in pans 4 hours or over night. The glaze will be completely absorbed, and the Bread will leave the pan easily.. Delicious!!! Enjoy!

I am a coconut and pecan lover. This sounds like a great new bread for Christmas day. All I need is coconut & buttermilk and I will be baking.
