Default Cooked chicken

I'm looking for a simple and Delicious recipe using cooked chicken. I put a couple of breasts in the crock pot and used one for BBQ chicken. So now I have one breast left over. It's for two people.

How about a salad? Greens,chopped Apple,walnuts,with a citrus vinaigrette?

My husband likes fajitas. We get the various peppers (red, yellow, and green), an onion and use the packaged seasoning. My husband prefers the pre-cooked chicken so there is no doubt that is cooked thru, start with cooking the vegetables, and add the chicken then cook about 3-5 minutes longer so the seasoning cooks into the chicken.

I don't have a recipe for you, but a question. What brand or kind of fajita seasoning do you use? I'd like to try it! Thanks!

It's good in quesadillas too. Or I've used it in mexican lasagna - layer tortillas, salsa, chicken, cheese, refried beans and bake like lasagna.

I read a recipe a bit ago that was pretty decent. It's a variant of chicken cordon bleu. Chunk up the cooked chicken, layer with deli-sliced swiss cheese; deli-sliced ham. I forget what bit of liquid, bread crumbs over the top and bake in the oven for maybe 30 minutes to melt all the cheese and thicken the liquid. I'm sure if you google chicken cordon bleu casserole, you'll find something.

To e the best chicken salad this time of year includes strawberries, candied pecans, and a sweet vinagrette dressing. Emerald brand candies pecans in a bag - usually found in the salad toppings section of the produce aisle - and Marzetti's Simply Dressed Strawberry Poppyseed Dressing are what I use. Divine!
