    Spicy Sausage Dressing

    1/4 cup butter or margarine
    5 cups cubed French bread, 3/4" cubes
    1/2 pound spicy pork sausage
    1 small onion, chopped
    1/3 cup thinly sliced celery
    1 medium apple, cored and chopped
    1/2 cup chopped pecans or walnuts
    1/3 cup game bird stock or chicken broth

    Preparation Instructions:

    In a large skillet, melt butter over medium low heat. Add bread cubes, stirring to coat. Cook and stir over medium heat until bread cubes are lightly toasted. Transfer bread cubes to large mixing bowl. Set aside. In same skillet, cook sausage over medium heat until meat loses pink colour, stirring to break up pieces. Add onion and celery. Cook and stir until vegetables are tender and pork sausage is cooked through. Add sausage mixture to bread cubes. add apple and pecans. Mix well. Add stock. Mix well. In greased 1 1/2 quart casserole, bake dressing, covered, at 350 degrees for 30 minutes. Uncover, and continue baking until hot, 15 to 25 minutes. Makes about 5 cups.
